Chocolate Bars
These are so easy to make and don’t take long to set, meaning depending on how far your nearest vegan chocolate selling shop is, you could eat these in less time than it takes to go on an expedition to buy some.
Ingredients
90g cocoa powder
110g cocoa butter (you can buy this easily online, or in many health food shops)
6 tbsps maple syrup (or to taste) 1/2 tsp Vanilla extract (optional)
I large handful of nuts or filling of your choice, roughly chopped
Pinch of sea salt flakes (optional)

Instructions
Melt 110g cocoa butter in a bain marie (a heatproof bowl sitting on a pan of simmering water). Make sure the bowl doesn’t touch the water as this could burn the butter. While the butter is melting, in a separate large bowl mix together 90g cocoa powder and a pinch of salt, if using. Roughly chop a handful of nuts/ fruit/ filling of your choice. When the butter has melted, add it to the bowl of cocoa mixture and stir until all the powder has combined and melted evenly. Add in 6 tbsp maple syrup and 1/2 tsp vanilla extract (if using). Mix in the handful of nuts, or the filling of your choice, until it’s completely coated in the chocolate. Spoon the chocolate mixture into moulds to your desired thickness – I usually make mine roughly 0.5cm. Try and work quickly so that the mixture doesn’t start to solidify. Put the chocolate in the fridge to set, then remove the bars from the moulds and transfer to a lidded container. Keep in the fridge for up to a week.
